How to make nightshade and lemon jam

In order to prepare delicious nightshade jam, you need to pour the available amount of red berries into the pan and cover them with sugar in a 1: 1 ratio. For one kilogram of nightshade fruits, one lemon is added, which is cut into circles and sent to the composition of healing jam. Further, the resulting composition must be left alone for hours, so that the berries let the juice flow. Next, the pan is sent to a slow fire and brought to a boil, after which you need to remove the white foam from the future jam and turn off the fire. When the berries in the juice have cooled, the procedure must be repeated, bringing to a boil, removing the foam and cooling. What harm can a berry do to health

As already noted, black nightshade is a poisonous plant that is very easy to poison. In case of poisoning, a person experiences clouding of mind, dizziness, nausea, loss of consciousness, as well as strong pain in the region of the stomach.

Contraindications to the consumption of the plant

Black nightshade has a number of contraindications that make the process of eating berries, as well as other dosage forms of the plant, impossible. Pregnant women and women who are breastfeeding will have to refuse to take nightshade. This product is also harmful for the work of the heart, since the plant significantly slows down its rhythm.

Harvesting and storage of black nightshade

Harvesting black nightshade is a process that does not tolerate missteps, since it is dealing with poisonous plant. Nightshade leaves and stems are harvested from mid-summer to early autumn, and berries from August to late October. Berries can be frozen for storage in the refrigerator, but the leaves and stems are dried in the sun and stored in well-ventilated boxes for up to 6 years.

What does the plant look like: photo

What black nightshade looks like can be seen in the photograph, while it should be noted that the described plant grows to a height of about one meter and above. Nightshade stems are strong, cylindrical below and flattened towards the top. The leaves are thick, ovate, and at the same time elongated, reaching 13 centimeters. The flowers are umbellate, white, collected 3-7 per inflorescence. The fruits of the plant are small (up to 1 centimeter in diameter), round, pitch black.

Black nightshade jam - a recipe for harvesting for the winter

Among the more than 1,500 varieties of nightshade, there are not so many edible ones. In fact, only black nightshade can be eaten, and also with reservations. The berries must be 100% ripe, otherwise you risk getting an upset stomach, or even poisoning.

The cultivated Sunberry nightshade is safer, but the wild nightshade is quite edible. They call nightshade in different ways and don’t be scared if you are offered to try late night jam, funnels, or bzdniki, it’s still the same nightshade.

Raw nightshade is rarely used because of its unpleasant smell and taste, but after heat treatment, all this disappears almost without a trace.

Nightshade jam - a classic recipe

In the classic version, only berries, sugar and water are used to make nightshade jam. But you can add the recipe yourself by adding vanilla, cinnamon, lemon, or other fruits and berries.

  • 1 kg of ripe black nightshade berries;
  • 1 kg of sugar;
  • 1 glass of water.

Make syrup from water and sugar. Dip the berries into the boiling syrup and, from the moment of boiling, cook the jam for at least 15 minutes. If you like thick jam, increase the cooking time to 45 minutes, but don't forget to stir the jam.

Ready jam is quite stable. It holds up well at room temperature and can be kept in the kitchen for half a month.

Nightshade jam without cooking

Knowledgeable people say that during heat treatment, nightshade loses many of its healing properties, and in particular, the ability to rejuvenate the body. That is why many people prefer to cook "raw" nightshade jam, without cooking.

Put the berries in a colander and generously pour boiling water over them. They will not have time to warm up, but the unpleasant smell will go away.

Grind the berries with a blender, or twist through a meat grinder. Add sugar, based on: for 1 kg of nightshade berries - 1 kg of sugar and put the jam for 2-3 hours in warm place.

Stir again and make sure the sugar has dissolved. Add the grated zest or juice of one lemon, and place the jam in clean, dry jars.

"Raw" jam should be stored in the refrigerator and it is desirable to use it for 4-6 months. Vitamins will not be stored longer and the jam will deteriorate.

And don't forget to read the contraindications. After all, nightshade is more medicinal berry than a treat.

Sunberry: useful properties and contraindications of garden nightshade

Do you want blueberries? But not simple, but Canadian - a harsh northern berry with a restrained taste and luxurious color. Then take note - sunberry, and also sunny berry and garden nightshade. The mysterious berry appeared in North American gardens a little over 100 years ago, and our summer residents and gardeners are just mastering the overseas guest sunberry. Its medicinal properties and contraindications are not inferior to other well-known berries, and the jam turns out to be very unusual. Ready to try?

A relative of tomatoes and potatoes

Not only our native biologist and breeder Ivan Michurin worked miracles for the benefit of science. His American colleague Luther Burbank (the "author" of a special variety of french fries) introduced the sunberry plant to the world in 1905. This is a hybrid of a huge Guinean nightshade and a small European nightshade, more fragrant and quite edible.

The sunberry's closest relatives are tomatoes and eggplants; it bears fruit with black berries that are collected in clusters. On one brush can be located up to 10 pieces the size of a cherry, the color is like that of a blackcurrant.

By their own biological characteristics the plant resembles tomatoes, and its main advantage is its great resistance to cold and drought. Gardeners joke: a kettle is enough to grow Canadian blueberry seedlings at home. And in the greenhouse and in the garden, she will already cope on her own - even without extra feeding and with moderate watering.

For eyes and joints

Sunberry came to Russia quite recently, and is already actively pushing tomatoes and zucchini in our gardens, and on the table - vases with cherries and raspberry jam. The mystique and assertiveness of the American blueberry has given rise to various myths and a lot of conflicting information regarding the properties and uses of the Canadian blueberry.

Sunberry can hardly be called the richest storehouse of vitamins: its beneficial properties and contraindications are due mainly to the mineral complex. Potassium, sodium, magnesium, calcium, iron, manganese, copper, zinc and chromium - all these essential substances for humans are in one modest berry. Canadian blueberries are saturated with tannins, valuable bioflavonoids and pectin - it contains about 15%.

One of the popular names for sunberry is blueberry forte. Many say that it is she who is part of the popular supplement of the same name. These are shaped nonsense (just look at the composition of vitamins to see “blueberry extract” there, and not nightshade), but the fact is the fact. Canadian blueberries are really very good for the eyes. And what else is sunberry famous for, the medicinal properties of which are being so actively studied today?

  • has a mild laxative effect and improves the functioning of the digestive tract;
  • is effective tool to cleanse the body of toxins and toxins;
  • strengthens the eye muscles and maintains vision during constant work at the monitor;
  • normalizes pressure;
  • helps in the treatment of colds of various etiologies;
  • relieves the condition with angina;
  • calms the nerves and helps to cope with constant insomnia;
  • relieves pain in the joints;
  • copes with edema and improves the condition of the kidneys (due to the diuretic effect);
  • relieves headaches;
  • helps in the treatment of skin diseases (including psoriasis).

How to apply?

In its purest form, sunberry is an amateur berry. Each person perceives the taste of garden nightshade in his own way - someone immediately spits out, someone eats handfuls, many are simply indifferent to it. ethnoscience also advises against eating sunberries straight from the bush, if you are not delighted with its aroma - there are many other options for treatment.

The sunberry plant and its use is a whole collection of recipes with the most unusual ingredients - honey, nuts, and even ... feijoa. What can I say, such an intricate doctor is this Canadian blueberry.

When strength is lost

To maintain the strength of the body and recover from fatigue, sunberries are mixed with pine nuts and honey. A glass of nuts and three glasses of Canadian blueberries are passed through a meat grinder and poured over a glass of linden honey. This mixture can be stored in the refrigerator. Taken before meals in a teaspoon.

With iodine deficiency

If you brought home feijoa from a vacation or an ordinary supermarket, do not miss the chance. An exotic medicine will not only replace a full-fledged dessert, but also support the thyroid gland.

For 2 cups of garden nightshade we take 1 cup of feijoa, grind with a blender and pour a glass of honey (preferably acacia). This medicine is stored in the refrigerator, taken before breakfast and lunch. One tablespoon is enough.

With angina

First option. Squeeze juice from nightshade berries, dilute in warm water (3 times more water!) And gargle.

Second option. We take 4 grams of berries and sunberry leaves, the same number of lungwort leaves, a glass of boiling water on top. We steam in a thermos, after 2 hours we cool to room temperature and gargle with a sore throat.

With purulent wounds and abscesses

Grind fresh berries of garden nightshade into a fine, fine slurry, lightly dilute with sour milk. We apply lotions to sore spots for 2-3 hours.

What's the harm?

On forums and on gardening sites, there is a constant debate about sunberry - the benefits and harms of the American berry are told by each person in their own way. Many lovers of traditional garden delicacies have one argument against Canadian blueberries - "tasteless". Scientists and doctors are free from sweet stereotypes, but they warn: you need to be very careful with sunberries.

  1. Sunny berry is a powerful allergen. If you are trying nightshade for the first time, be sure to eat a couple of berries for a test and wait for the reaction of the body. But even if there are no negative reactions, doctors do not advise eating more than a handful of berries a day. No one has canceled the laxative reaction yet.
  2. The pectins in the composition of the sunberry have the property of intensively “dragging” lead and other heavy metals from the soil. Therefore, it is generally forbidden to plant garden nightshade within the garden, and in dachas and villages, the same principle of a handful must be observed.
  3. During pregnancy, you will also have to stop at ordinary blueberries - Canadian is strictly impossible. There are substances in nightshade that can increase uterine contractions and even provoke a miscarriage.
  4. Sunberry has a mild sedative effect, so you should not drive if you have actively eaten an overseas berry. But a couple of spoons of Canadian blueberry jam or jam will not harm your driving skills - these are still not tranquilizers, but ordinary nightshade.

"Sunny" Canadian Blueberry Jam

Sunberry berries have a mild, tart taste, not at all like the usual sweetness and richness of raspberries, currants or cherries. Some solar berry lovers describe its taste as “a unique bouquet of sour currants, tart gooseberries and sweet blueberries with a hint of freshly cut grass,” but most frankly do not like it.

But almost everyone who has tried Canadian blueberries admits that its taste changes surprisingly in jam, and at the very better side. The color is also amazing - dark purple, similar to the color of rich ink, funny coloring the tongue and lips. Not only jam is prepared from garden nightshade - also jams, stuffing for pies and dumplings, marmalades and jelly, even dried for the winter for tea.

But do not forget: jam is a rather high-calorie product, the “Canadian” one has as many as 220 calories per 100 g. Therefore, one or two spoons of tea will be enough to keep the figure and fully enjoy the benefits of sunberry.

Sunberry jam with lemon

You will need: 1 kg of ripe sunberries, 1 kg of sugar, a glass of water, juice of two lemons and 2-4 sprigs of mint (to taste).

We cook sugar syrup, when it boils, we throw in the washed berries. After 5 minutes on the stove, remove the jam to stand for 4 hours, repeat this 2-3 times. (Therefore, it is better to start cooking in the morning). In the last brew, add mint and lemon nectar.

Sunberry jam with ginger

You will need: a glass of sunny berries, a third of a glass of sugar, a teaspoon with a slide of grated ginger, juice of half a lemon.

Combine the sunberry, sugar and ginger in a saucepan and cook for 10 minutes (you need to stir constantly!). Adding lemon juice, remove from the stove - and in a jar. Then we put the jar in a pot of hot water so that it does not reach the lid by 1-2 cm. After 10 minutes, you can take it out, cool and hide it in the refrigerator.

What do the reviews say?

Difficult to find in Russian dachas and garden plots a more controversial berry than sunberry: reviews say only good things about it or scold it mercilessly. Subjective assessment plays an important role here.

Northern berry lovers appreciate its unusual taste, calming properties and ability to remove headaches.

“Sunburys are an excellent berry, you can make anything from it: both juice and jam. To taste, the jam resembles blackcurrant, only it is very strongly painted. And to remove the specific bitterness of sunberries, you just need to pour boiling water over the berries before cooking.

Opponents of Canadian blueberries also have their own arguments.

“The taste of sunberry jam is quite unusual, much better than the tasteless fresh berry. But its medicinal properties are not so unique, because it is full of others. useful berries, our, relatives.

Experienced skeptic gardeners agree on one thing: garden nightshade is absolutely unpretentious and always gives an excellent harvest. If suddenly a cherry didn’t grow, a raspberry failed or a currant withered, sunberry is guaranteed to provide you with bright and healthy jam for the winter.

And in order to feast on fresh berries, it is important to wait for them to fully ripen: they should be dark purple, elastic, but already soft enough. It is these berries that will fully give you their unusual taste and healing power, and you will definitely become a sincere fan of this unusual North American hybrid.

Garden nightshade "Sunberry"

The plant is characterized by unpretentiousness - cold and drought resistance, as well as high productivity.

Sunberry is the result of many years of work by the American breeder Luther Burbank, in 1905 he crossed two nightshades: Guinean (also called African garden blueberries) and European creeping. From two tasteless, but non-poisonous plants, a hybrid with edible berries was obtained. Nightshade, which until that time was not in nature. The novelty has inherited all the best from its parents: from the African ancestor - large-fruited, high yield, unpretentiousness, from the European - a pleasant taste, as well as medicinal properties creeping nightshade, recognized by both folk and official medicine.

Sunberry berries contain selenium, which slows down the aging process, anthocyanins, which improve blood composition, silver, which helps to cope with infections, as well as pectins, which remove poisons and toxins from the body.

The results of the study of the mineral composition showed that the ash content of sunberry fruits (in terms of an absolutely dry sample) is 6.24 + 0.02%. The content of the main macro- and microelements (mg/kg) was determined: K - 3200; Na - 2600; Ca-950; Mg - 370; Fe - 60; Zn - 19.0; Mn - 11.8; Cu - 8.71; Cr - 6.86; Ni - 0.73. An analysis of the mineral composition shows that the fruits of sunberry, in addition to a sufficiently high content of sodium, potassium, calcium, iron, magnesium, are rich in trace elements less common for medicinal raw materials, but also necessary for the life of the body, such as manganese, copper, chromium and nickel. It should be noted that in the fruits of sunberry the content of the most dangerous chemical elements, such as lead, cadmium, arsenic, mercury, is within the MPC.

The study of the mineral composition of sunberry fruits showed the presence in them of the necessary complex of macro- and microelements.

A spectrophotometric study showed the presence in sunberry fruits of various classes of biologically active compounds that provide a wide range of pharmacological effects of the plant: chlorophyll-containing compounds, a complex of bioflavonoids, carbohydrate components, anthocyanins and tannins.

It has been determined that sunberry fruits are rich in pectin-containing raw materials: the content of pectin substances in them reaches 15%.

Fact established high degree extraction of lead with pectin substances of sunberry fruits. The maximum degree of extraction of lead cations at pH=10.5 is 80% of the initial concentration of Pb2+ (20 mg-equiv*ml-1) during the contact time of 60 min; the sorption activity of pectins in this case is 415 mg/g.

Harvest should be in September, when the berries darken and become large. Although some gardeners prefer to harvest later. In autumn, Sunberry nightshade is tightly covered with a film to preserve the fruit. In this state, the berries can be harvested until the snow falls. Do not rush to pick berries, they will not lose their useful qualities and will be better preserved on the bush.

To collect the seeds, mash the berries and rinse immediately under running water. Then dry the grains. But keep them for no more than two years, otherwise germination will be lost.

Juice and fruits have a wide range healing properties.

The fruits of the "sunny berry" have a beneficial effect on visual acuity, have antiseptic, laxative, diuretic properties.

Sunberry juice is used for neurosis, gastritis, colitis, cystitis, hypertension, neuralgia, bronchial asthma, tonsillitis.

Thanks to healing properties, as well as pleasant taste, this plant can be used as a source of dietary and preventive nutrition.

Recipe: Jam from garden nightshade berries is not boiled, as it is! Temperatures above 50°C destroy substances that resist aging. It is better to pass ripe sunberry berries and the same weight of non-acid apples of the "ranet" variety through a meat grinder, mix thoroughly with sugar (1 kg of sugar per 1 kg of berry-apple mass) and keep everything warm for 4-5 hours. So that the sunberry blanks do not have a nightshade flavor, the berries must first be doused with boiling water. Let stand for a few minutes, drain the water and only then proceed with processing.

Fresh berries of garden nightshade are stored for a month. They contain a lot of sugar and tannins, and less organic acids. This is due to the taste of berries - spicy (reminiscent of blueberries), sweet, but fresh. Therefore, it is good to add sour components to the jam (quince fruits, semi-cultivated apple trees), as well as flavorings (leaves of lemon mint, snakehead, lofant, cherry, lemon and orange zest). The optimal ratio of sugar and berries is 1.2:1. The berries are boiled, and a lot of syrup is obtained.

By diluting the syrup with vodka 1:1, you can make a wonderful purple-raspberry liquor or take 1/3 of the jam syrup and 2/3 of the vodka.

Delicious and beautiful kissels are prepared from these berries. To prepare jelly, berries can be dried for the winter.

Excellent dumplings and pies are made with nightshade. The filling for pies can be prepared from fresh berries, filling them with whipped cream of egg white, sour cream and sugar.

Recipe: Sanberry jam is made as follows: for 7 kg of ripe berries twisted in a meat grinder - 5 kg of sugar, mix thoroughly, add lemon scrolled in a meat grinder and cook until boiling. Infuse for 24 hours, arrange in scalded jars. Store in the cellar.

Recipe: You can add something sour to the jam: quince, apples, mint leaves, cherries, lemon or orange zest. The ratio of sugar and fruit is 1.2:1. The berries are well boiled and a lot of syrup is obtained. By diluting it with vodka 1: 1, you can make a wonderful liquor.

On fertile soil with sufficient moisture, nightshade grows rapidly and in early August reaches a height of 2 meters. The stem is up to 3 cm in diameter and even woody in the lower part. It is clear that such a giant does not need support.

Under the weight of berries, only stepchildren descend to the ground. Here, under them, put wooden supports - slingshots.

You don't need to stepchild. The white flowers of the pieces are collected in drooping umbellate brushes.

Usually in Solanaceae, flower clusters are formed in the forks of branches or in the axils of the leaves. American nightshade is an exception. His brushes are laid anywhere, even on the trunk near the ground. Therefore, stepchildren do not make sense.

The berries grow quickly and, reaching the size of a cherry, become black and shiny. But they need some more time to mature. When they are pressed through the fingers, then they are ready for use. The main crop ripens in September.

Nightshade withstands light frosts. In mid-September, before the onset of stable cold weather, they either wrap the bushes with plastic wrap, or uproot them and put them in a greenhouse that is vacant by this time - this is how they ripen well.

Sunberries are sown for seedlings at the same time as tomatoes - no later than mid-March. The grains of garden nightshade are small, so be extremely careful when sowing. So that they do not dry out on the surface and do not rot, hidden too deep, the grains should be embedded no more than 0.5 cm.

When real leaves are tied, plant the plants in separate pots. IN open ground transplant seedlings in May or early June: the soil and air should warm up well. Choose a bed away from cabbage, because the cruciferous flea does not disdain sunberries.

Part 3 - Garden nightshade "Sunberry"

Natives countryside Generations of the 1940s and 1950s always remember grandmother's pies "with elderberry". Black nightshade berries were eaten fresh, although palatability she couldn't brag. But it grew on its own, requiring neither care nor space on the site.

The berry is small, but the benefits are great

Today, doctors agreed that this plain-looking and not so delicious berry pretty helpful. And her sister - bred a century ago by Luther Burbank from large-fruited American nightshade and our small, but high-yielding and cold-resistant - is completely recognized as a medicinal plant:

In short, this plant is just a godsend for those who want to maintain their health and stay young longer!

General description of culture

Sunberry is an annual plant. But it grows over a meter tall. And it can produce fruits from 10 to 20 kg per bush! The black berries of the hybrid are large, the size of a cherry.

The plant blooms throughout the summer, from June until frost. Therefore, you can pick berries almost daily. Flowers collected in clusters, reminiscent of potatoes, look very beautiful next to green and already black berries.

As an adult, sunberry easily tolerates drought, heat and frost. The next year, it is quite possible to get a lot of shoots from the self-sowing in the old place. The gardener simply needs to choose the strongest and tallest sprouts and remove the extra ones.

Sunberry cultivation

The seeds of this plant are very similar to tomatoes. They are quite small.

Seed treatment before planting

The disadvantage of sunberries is that the seeds hatch with great difficulty. Therefore, first they need to be held for 20 minutes in a warm solution of potassium permanganate. Then, carefully with a blade, you need to make an incision in the place where the seed sprout usually appears.

Some gardeners offer a different way. They advise not to cut the shell of the seed, but only to make notches along the peel with a needle. And then the seeds are put in a jar with large washed and calcined river sand. They should fill the container halfway. With vigorous shaking of the jar, the integrity of the seed coats is broken, and the kernels remain intact.

This should be done very carefully so as not to damage the kernel inside the seed!

The operated seed is placed on a damp cloth, covered with a film or glass and placed in a warm place so that it hatches. This process may be slightly delayed when compared with sunberries and peppers.

Sunberry seeds are planted at the end of February so that the plant has time to give a good harvest.

Growing seedlings

Sunberry is not much different in agricultural technology from tomatoes and. You can even plant them in the same box with them. To obtain seedlings, neutral land is required. Therefore, it is not necessary to add peat to the soil.

Expanded clay is poured at the bottom of the box to provide drainage. A layer of soil is poured on top of it - 10 centimeters. A hatched seed is placed in it to a depth of half a centimeter. The soil is moistened and covered with glass or polyethylene.

The mini-greenhouse should be regularly ventilated so that the earth does not become moldy. Shoots will appear in three months. After the plants throw out the third real leaf, they dive and put them in a well-lit, warm place.

Seedlings are not watered very often, but it is impossible to allow the earth to become “stone”.

Planting in open ground and caring for sunberries

Sunberries are planted along with tomatoes and peppers. Only the distance between the bushes should be at least 70 centimeters, as they grow very much.

During the summer, it is enough to feed the sunberry with mullein a couple of times and water it in a day or two - and very soon the gardener will be rewarded for his work!

Recipes

Fresh sunberry fruits are not very tasty, but they are simply amazing in the form of jam. And yes, it makes amazing wine.

It is important to remember that in order to preserve the beneficial properties, black nightshade fruits should be boiled for no more than 5 minutes! And to improve the taste, you need to put lemon in the jam.

Preparing nightshade raisins

Berries are dipped in boiling sugar syrup for 2 minutes. Then they are taken out with a slotted spoon and regaled. You can put these "raisins" in pies, decorate them with cakes and pastries, ice cream and add to cereals (not dairy).

Sunberry Healing Jam Recipe

300 g of sugar are poured into 1 kg of berries, put on fire and brought to a boil. Lemon chopped or ground in a meat grinder is also added there. Jam is boiled for 5 minutes and poured into jars. Store in the refrigerator as it will ferment at normal room temperature.

You should consume 5 tablespoons daily, you can with tea or spread on a bun.
