In my family, meatballs have been especially popular since the times when the children were in school. I remember that I was preparing a large duck roast so that there would be enough meatballs for several days. Now times have changed and I hardly cook anything for future use. I save a few meatballs for my daughter’s breakfast before work, since she doesn’t have time to cook in the morning. These minced beef meatballs turned out so tasty that I wanted more right away.

To prepare meatballs in sour cream and tomato sauce in the oven, prepare the necessary ingredients from the list. The rice must first be cooked until half cooked and allowed to cool.

Place the minced meat in a deep bowl, add a little pepper and salt, add half of the herbs. You can use any herbs you like.

Finely chop the onion and add it to the minced meat.

With wet hands, form meatballs from the minced meat and place them in a mold greased with vegetable oil.

In a plate, mix sour cream, tomato paste, vegetable oil and flour. Add salt and pepper.

Let's figure out how to prepare such a sauce and what additives can be used to diversify its taste.

To make sauce for meatballs, you don’t need any special culinary skills or expensive products. Meatballs are best served with gravy with a slight sourness, so they are often prepared from a mixture of sour cream and tomato paste.

To prepare the sauce, you should not use fatty sour cream; a product with a fat content of 15-20% is quite suitable. If you use rich homemade sour cream, the sauce will be too high in calories.

Tomato paste should be chosen with a natural composition without dyes. You can use vegetables to complement the sauce; they will add the necessary juiciness and thickness. To make the sauce tastier, it is recommended to fry the vegetables first. But in this case, the gravy will be more high in calories.

To add flavor, you can add dry herbs, herbs, and spices. You can add fresh herbs. The sauce will acquire an exotic taste if you add citrus zest and juice to it. You can also prepare tomato-sour cream sauces with the addition of mushrooms, pickled cucumbers, and cheese.

The prepared meatballs are poured with the prepared sauce and baked in the oven. As a result, the dish is soaked in the sauce, and it turns out very tasty and juicy. The remaining gravy at the bottom of the pan can be poured over the side dish. Moreover, almost any side dish will suit this dish.

  • 2 tablespoons sour cream;
  • 1 tablespoon of tomato paste;
  • 2 tablespoons flour;
  • salt, pepper to taste;
  • 1 glass of water.

Pour flour into a bowl, add sour cream, stir thoroughly so that no lumps form. Add tomato paste there and gradually pour in vegetable oil. When introducing vegetable oil, you need to constantly stir the mass with a whisk or spoon.

Advice! If desired, you can use other spices. For example, you can add dry Italian herbs mixture to the sauce or simply add dry basil and oregano.

Dilute the prepared mixture with water and mix again very thoroughly. Salt and add spices to taste. Pour the prepared sauce over the meatballs placed in the pan and bake. If you need to make a sauce for already prepared meatballs, then pour the prepared mixture into a saucepan, bring to a boil and cook, stirring for 5-7 minutes. Pour the prepared sauce over the finished dish.

Pink sauce for meatballs with onions

Pink sauce is perfect for meatballs; it goes well with different types of side dishes.

  • 3 cups broth or water;
  • 2 tablespoons sour cream;
  • 1 onion;
  • 2 tablespoons flour;
  • 1 tablespoon of sugar (without a slide);
  • 2 tablespoons vegetable oil;
  • salt, pepper mixture to taste.

Peel the onion and chop it very finely. Heat the oil in a frying pan and fry the onion. There is no need to fry it too much, just bring it to a translucent state, sprinkle the onion with flour and mix well so that all the flour is saturated with oil.

We dilute tomato paste and sour cream in broth or water, pour this mixture in a thin stream into the frying pan, stirring gently with a whisk. Salt the sauce, add sugar and spices. Let it simmer for 5-7 minutes. The sauce can be used for baking meatballs; it can also be poured over the finished dish.

Tomato-sour cream sauce with mushrooms

Mushroom sauce prepared with sour cream and tomato paste is very tasty. It is suitable not only for meatballs, but also for other dishes - cutlets, chops. Even ordinary fried or boiled potatoes, poured with this gravy, will become much tastier.

  • 200 gr. champignons;
  • 1 onion;
  • 150 ml sour cream;
  • 0.5 tablespoon of tomato paste;
  • 50 gr. dill;
  • 0.5 teaspoon salt;
  • 1 tablespoon vegetable oil for frying.

Peel the onion and chop it very finely. We wash the champignons and chop them into small pieces.

Pour oil into a frying pan, as soon as it warms up, fry the onion in it. When it becomes translucent, add the champignons and continue cooking, stirring occasionally.

After 10 minutes, add sour cream and tomato paste, mix and leave to simmer for about another 10 minutes. Add finely chopped dill and leave on the stove for a couple more minutes. The sauce is ready, but to make it more homogeneous, you can beat it with a blender.

Sauce for chicken meatballs with vegetables and cheese

An excellent sauce for chicken meatballs is gravy with vegetables, sour cream, tomato and cheese. It is recommended to use processed cheese; the sauce is especially successful if you use cheeses marked “for soup”, since this product goes well in hot gravy.

  • 1 onion;
  • 1 carrot;
  • 2 cloves of garlic;
  • 250 gr. sour cream;
  • 2 tablespoons of tomato paste;
  • 50 gr. processed cheese;
  • salt, pepper to taste;
  • oil for frying.

Finely chop the peeled onions and garlic, three carrots on a fine grater. Pour oil into a frying pan and fry the prepared vegetables in it. Fry for 15 minutes, stirring occasionally, then add 2-3 tablespoons of water, cover with a lid and simmer over very low heat until completely soft.

Separately mix sour cream and tomato paste, add this mixture to the prepared vegetables. Stir and add water to achieve the desired thickness of the sauce. 2 tbsp. water,

½ cup ketchup,
1 orange (juice),
¼ tsp. hot sauce or chili pepper,
2 tbsp. soy sauce,
2 tbsp. grain mustard,
2 tbsp. apple cider vinegar,
2 tbsp. starch (preferably corn starch),
2 tbsp. Sahara.

Preparation:
Combine orange juice, sugar, starch and apple cider vinegar and stir until sugar dissolves. In a separate bowl, mix ketchup, soy sauce and hot sauce or ground red pepper and mustard. Pour everything into a heavy-bottomed frying pan, place over medium heat and cook, stirring, until thickened, about five minutes. You can add orange zest to the finished sauce. 1 tbsp. l. flour,
½ tbsp. l. butter,
2-3 tbsp. broth.

Preparation:
Grind the butter with flour, place the mixture in a frying pan and bring until hot, but the flour should not turn yellow. Combine the mixture with vegetable, meat or chicken broth and, stirring with a spatula, bring to the desired thickness.

Sour cream sauce

Ingredients:
½ tbsp. sour cream,
1 tbsp. l. butter,
1 tbsp. l. flour,
1 tbsp. broth,
salt - to taste.

Preparation:
Lightly fry the flour in oil, dilute with hot meat broth or vegetable broth, add sour cream and cook over low heat for about 10 minutes. After cooking, strain the sauce, add salt and stir.

Sour cream sauce with onions

Ingredients:
½ tbsp. sour cream,
1.5 tbsp. l. butter,
1 tbsp. l. flour,
1 tbsp. broth,
1 onion,
½ tbsp. l. hot sauce,
salt - to taste.

Preparation:
Fry the flour in oil, dilute with hot meat broth or vegetable broth, add sour cream and cook over low heat for about 8 minutes. Separately, fry finely chopped onion in butter and add it to the sauce. Then remove the finished sauce from the heat, add salt and hot sauce to taste.

Sour cream sauce with vegetables

Ingredients:
1.5 tbsp. low-fat sour cream,
1 tbsp. l. flour,
1 carrot,
1 onion,
1 sweet pepper,
1 tbsp. any broth or just water,
salt and spices - to taste.

Preparation:
Cut the onion into small cubes and fry it in a frying pan with heated vegetable oil until transparent. Then add the remaining vegetables cut into small pieces to the onion and simmer together until tender. Then pour flour into the pan and fry with vegetables until golden brown. Dilute the sour cream with broth and gradually pour the mixture into the pan with the vegetables. 3 tbsp. any broth or water,
2 tbsp. l. tomato paste,
2 tbsp. l. sour cream,
1 onion,
2 tbsp. l. flour
1 tbsp. l. Sahara,
2 tbsp. l. vegetable oil,
mixture of peppers - to taste.

Preparation:
Heat vegetable oil in a frying pan, fry chopped onion in it, add flour, mix well. Dissolve sour cream and tomato paste in broth or water and pour the mixture, stirring, into the frying pan. Add sugar and spices to taste. Let the sauce simmer a little over low heat and pour it over the meatballs laid out on the baking sheet. Cover them with foil and place in an oven preheated to 180ºC for 30-40 minutes.

White milk sauce for meatballs

Ingredients:
1 tbsp. milk,
1 tbsp. l. flour,
vegetable oil,
salt, pepper, herbs.

Preparation:
Add flour to a small amount of vegetable oil heated in a frying pan and stir quickly. Then, stirring constantly, gradually pour in the milk and add spices. Stir and quickly remove the sauce from the heat, otherwise it will become too thick.

Mushroom sauce with sour cream

Ingredients:
1.5 tbsp. sour cream,
250-300 g champignons,
1-2 onions,
1 tbsp. l. flour,
vegetable oil,
salt and spices - to taste.

Preparation:
Take two frying pans. In one, fry the champignons cut into small pieces in vegetable oil, in the other, chopped onion. Combine the contents of two frying pans, add flour, stir and cook until the flour turns golden. Then add sour cream, salt and spices, let it simmer for a few minutes and, after removing from the heat, pour the finished sauce into a blender, where mix the sauce until smooth. Juicy meatballs with gravy are a completely independent dish in themselves. Supplement them with a light salad or side dish - you will get a nutritious and very appetizing dish that will leave few people indifferent. You can cook meatballs in sour cream sauce in a frying pan or in the oven; today I’ll tell you how to cook both options. Shall we begin?!

Prepare the ingredients according to the list.

Based on the basic minced meat, we will prepare two versions of meatballs - classic meatballs and hedgehog meatballs with rice.

Boil the rice in advance. To do this, rinse a portion of rice, drain the cold water and pour hot water over the rice. Add a pinch of salt, bring the rice to a boil and cook for 10-12 minutes until almost fully cooked.

Combine minced meat, finely chopped onion and garlic in a bowl. Beat a chicken egg with 1-2 pinches of salt.

Add beaten egg, mustard, herbs and spices to taste and ground black pepper to the minced meat. Mix everything thoroughly and beat the minced meat for 2-3 minutes until it becomes viscous and dense.

To prepare hedgehog meatballs, add rice to the minced meat and mix everything thoroughly. I divide the minced meat in half and prepare two versions of meatballs at once.

With your hands soaked in water, form the minced meat into small meatballs. If you plan to cook the meatballs in the oven, you can make them larger - they will bake well, and you won’t have to worry that the minced meat inside will not be fully cooked. To cook meatballs in sour cream sauce in a frying pan, it is better to prepare small meatballs - they will cook faster.

Grease your hands with vegetable oil and lightly roll the meatballs in your hands again. The oil will create a thin protective film on the surface of the meatballs - the meatballs will turn out a little more juicy and rosy.

Place the prepared meatballs in the refrigerator for 20-30 minutes to cool. At this stage I freeze some of the meatballs.

While the meatballs are cooling, prepare the sauce. Finely chop the onion and grate the carrots.

Add a little vegetable oil to a preheated frying pan, add the onion and, stirring, fry for 2-3 minutes. Then add the carrots and fry everything together for a few more minutes until the vegetables are soft.

Add wheat flour and, stirring, fry the mixture for a few more minutes until the flour changes color.

If desired, also add a little tomato paste and fry everything together for a few more minutes.

Gradually, stirring, pour hot broth or water into the pan. Add sour cream and mix everything thoroughly. Bring the sauce to a boil over low heat.

Add 1-2 bay leaves, herbs and spices to taste. I have ground coriander, cumin, oregano, dried garlic, suneli hops and a mixture of Provençal herbs. Also add a little sugar, ground black pepper and salt to taste. Reduce heat to low and simmer the sauce for another 2-3 minutes.

Heat a small amount of vegetable oil, place the chilled meatballs in a frying pan and fry on both sides until golden brown, about 4-7 minutes (depending on size).

Place the fried meatballs in the sauce. Bring the sauce to a boil, reduce the heat to low and simmer the meatballs for another 25-30 minutes, covering the pan with a lid.

You can also place the fried meatballs in a baking dish, pour over the sauce and bake in the oven until done (my favorite option). Pour the sauce into the pan until it reaches about halfway up the meatballs. Cover the pan with foil and place in an oven preheated to 100-110 degrees for 30 minutes.

To cook raw, not pre-fried meatballs in sour cream sauce in the oven, place the meatballs in a mold, add the sauce so that the meatballs are 2/3 immersed in it. Place the pan in the upper part of an oven preheated to 200 degrees. Bake for 12-15 minutes until the meatballs are golden brown, then cover the pan with foil, reduce the temperature to 180 degrees and bake for another 20-25 minutes until done.

Sprinkle the finished meatballs with fresh herbs and serve.
