Delicious Azerbaijani soup

This soup can be eaten both hot and cold: place curdled milk (1.5 l) in a saucepan over low heat and bring to a boil, stirring constantly so that it does not curdle, then add 1/2 cup of boiled rice, stirring constantly, add a mixture of 2 eggs, 1-2 tbsp flour and 1 tbsp cold sour milk. Bring the mixture to a boil, without stopping stirring, add 2-3 tablespoons of finely chopped cilantro. When the mixture boils again, add salt to taste and turn it off immediately.

You need to add salt strictly before turning it off, because if you do it earlier, the curdled milk will curdle and the soup will not work.

We make it in the summer and no matter how much of this soup I prepare, it is eaten in half a day.

Over high heat, stirring constantly until the mixture turns yellow. Reduce heat and stir further until the sugar syrup turns yellow-brown. The sugar should not burn; it should smell like caramel. Immediately beat/mix with a mixer. Place the finished dough 1-2 cm thick on a greased baking sheet (or in a mold), smooth it out and place in an oven preheated to 200C. Semolina and curdled milk casserole

Ingredients:

Sugar 200 g

Margarine 100 g

Lemon 0.50 pcs

Semolina 2 cup

Soda 1 tsp.

Flour 3 tbsp.

Curdled milk 250 ml

Salt to taste

Cooking method

Mix semolina with yogurt and let it brew for 50-60 minutes so that the semolina swells. Then add eggs beaten with sugar, melted and slightly cooled margarine, grated lemon zest and juice, prepared raisins and flour mixed with soda.

Place the dough in a pan greased and sprinkled with breadcrumbs and bake in the oven at medium heat for 40-45 minutes.

Homemade hard cheese with pepper and dill

Milk (pasteurized) - 2 l

Yogurt - 500 ml

Chicken egg - 4 pcs

Salt (I put a little less) - 1 tsp.

Sweet pepper (optional, quantity to your taste)

Dill (optional, fresh, to your taste)

Ferment 0.5 liters of pasteurized milk; you can simply leave it at room temperature for 2-3 days.

Place 2 liters of fresh, PASTEURIZED milk on the fire and bring to a boil.

During this time, beat 4 eggs and sour milk by hand with a whisk until smooth and sour cream.

As soon as the milk boils, turn the heat to the lowest setting and, stirring constantly, add the sour-egg mixture. Stirring, bring the mixture until it separates into the curdled part and transparent yellowish whey. The process took me about 7-10 minutes.

Then place in a sieve or colander lined with gauze and allow all the liquid to drain.

While the liquid is draining, chop the pepper very finely and also chop the dill.

Add salt and additives to the cheese mass and mix well.

Once the liquid has drained so that the mass is thick, place the cheese tightly in any form, press down on top with a weight and leave for 8-10 hours.

Then take out the cheese, grate it a little with salt and put it in the refrigerator to cool for 1-2 hours.

I did not rub it with salt and also did not cover it with anything. In vain, it got a little weathered and almost immediately, it’s better to take it out of the mold, wrap it in film or in a bag.

Dear readers, hello! Curdled milk is everyone's favorite product. Some people like to eat it fresh, while others specially ferment milk so that they can later use it to make homemade baked goods. Agree, when the house smells delicious of pies or pancakes, it’s always nice to come back to such a house. What to cook from yogurt tasty and quickly if you have a jar of this amazing product? In this article I will give you some of the simplest and fastest recipes that I constantly use.

What to cook from yogurt - making pancakes

For pancakes without yeast, you need to take 1 glass of yogurt (you can replace yogurt with sour milk if it is not available), 2 eggs, 1-2 tablespoons of granulated sugar or to taste, half a teaspoon of salt, half a teaspoon of soda, 50 g of vegetable oil, 2 cups of flour.

Recipe:

  1. Mix the yogurt and egg into a homogeneous mass, then add sugar, salt and soda, stir everything again until smooth.
  2. Sift the flour and add in small portions to the resulting mixture with yogurt. After each addition of flour, mix the dough thoroughly.
  3. Let the dough stand for 5 - 10 minutes so that it swells. Heat the frying pan, it is better if it is a cast iron frying pan, it heats up better and more evenly. Turn the heat under the frying pan to medium, so your pancakes will bake better and not burn.
  4. Pour the finished dough into the middle of the frying pan with a ladle and shake the frying pan from side to side, trying to distribute the dough evenly over the entire surface.
  5. As soon as the pancake is baked on one side, use a spatula to turn the pancake over to the other side so that it is baked on the other side as well.

Place the finished pancakes on a plate. You can coat each pancake with melted butter or butter using a brush (follow the links and you will learn many interesting things about the benefits and harms of butter). Butter pancakes will be more tender and will simply melt in your mouth.

Pancakes can be served with sour cream, condensed milk, apple jam, fresh berries, and jam. It's a matter of taste.

These pancakes can be made without soda. In this case, when preparing the dough, you need to add a packet of French yeast instead of soda; the rest of the recipe remains the same. Yeast pancakes will turn out thin, with holes. Their taste will be no less tasty than those cooked with soda.

  1. Mix yogurt, eggs, butter, sugar and salt in a dish until smooth.
  2. Gradually add sifted flour and then yeast.

  5. During this time, prepare the filling.
  6. After 3 hours, take out the dough and turn on the oven to preheat.
  7. At room temperature, the dough begins to rise quickly and while the oven is heating up, we form the dough into pies. Place them on a greased baking sheet, let them sit for 15-20 minutes and put them in the oven. Bake at 250º until they are browned. Or you can fry pies from this dough in oil in a frying pan.

As soon as the pies or buns are browned, take them out of the oven, generously brush them with melted butter and cover them with a clean napkin so that our baked goods can “rest.”

Dough with a similar recipe can also be prepared in a bread machine. All ingredients are placed in the bowl, turn on the “dough” program. At this time, prepare the filling for the pie.

How to make a yogurt pie

  5. Bake in an oven preheated to 180-200º for 20-25 minutes. To check if the pie is baked, pierce the pie with a toothpick or match: if there is no raw dough on their surface, then the pie is ready.

If desired, the cake can be sprinkled with powdered sugar through a strainer and decorated with berries or grated chocolate.

If you decide to make one large pie, then place half of the dough on a greased baking sheet, then add any filling, and top with the other half of the dough. We pinch the edges and brush the top of the dough with beaten egg or melted butter, so it will brown more beautifully.

In the meantime, the kettle has boiled, we cut the pie and treat the guests.

I recently baked this pie especially for you, took photographs of the cooking process, but the photos turned out to be unsuccessful. That's why I didn't dare to post them here.

It's no secret that the tastier the muffin or regular baked goods, the more calories, cholesterol and other blood enemies of our body it contains. Of course, someone stoically endures the test, not allowing themselves to put even a crust of bread in their mouth. And some simply cannot live without cakes and pastries, pies and cookies, buns, rolls, fresh aromatic loaves with a crispy crust. So what now, to these devoted supporters of sweets, i.e. a good life to waste? No, as long as sour milk is used in cooking, aka yogurt (or yogurt, if that makes sense).

Curdled milk for low-fat baking

Curdled milk recipes have always been popular in almost all cuisines of Europe and America. And the East, which is a “delicate matter,” also often used this wonderful ingredient in the preparation of bakery products. And this is not surprising. After all, this fermented milk product, firstly, it is rich in calcium and protein - the building blocks of our body. Therefore, it is extremely useful both in its natural form and as an ingredient in baking. Secondly, any yogurt pie has a soft dough mass and is tender and airy. This is especially true for yeast dough. It is about such products that they say: “Melts in your mouth!” Thirdly, sour milk can perfectly replace some fat-containing products, if not completely, then by half - for sure. Those. if the recipe calls for 250 g among other ingredients butter, Baking with yogurt allows you to take a hundred grams less, supplementing the rest with a large amount of kefir. The same applies to vegetable oil, sour cream or internal lard - “interior” lard, often used by bakers and confectioners. Pies or cakes only benefit from such a replacement, acquiring a creamy dough texture, and our bodies better absorb food with this component.

Recipe to try

And now a specific recipe for how delicious baking from yogurt can be. Let's make some cookies for tea! We need:

    flour - 400 grams;

    sugar - a hundred gram glass;

    curdled milk - 2 cups;

    vegetable oil - 50 grams. But, remembering the principle of substitution, you can do a little less, and then a little more curdled milk;

    fresh lemon juice - 2 tablespoons;

    soda - half a teaspoon;

    powdered sugar (to sprinkle on finished cookies);

    butter - 5-10 grams, to grease the pan.

The procedure is as follows: pour sugar into the curdled milk (if you want sweeter cookies, pour in not 100, but 120 grams, for example), add butter and thoroughly beat the mass with a mixer until it acquires a creamy texture. Now the soda is quenched, added to the workpiece, then it’s the turn of the flour. To make yogurt baked goods fluffy, don’t forget to sift the flour first. Knead the dough - do it thoroughly so that all the ingredients are thoroughly mixed. By the way, if you add jam or jam, or just fresh berries, you will get a delicious yogurt pie! Then the dough should be placed on a cutting board or table, previously well dusted with flour. Roll out a sheet from it, preferably a square or rectangular shape - adjust the size to the baking sheet. The thickness of the sheet is half a centimeter. A baking sheet is greased with oil, the dough is carefully transferred onto it, and everything is placed in the oven. Warm it up in advance. Baking temperature - 180 degrees. Readiness is checked with a match or wooden skewer. And the color of the baked goods, of course, will indicate the degree of baking. Then the baking sheet is removed, the sheet of hot cookies is cut into ribbons or squares - as you wish. Each cookie is rolled in powdered sugar. With tea or coffee, this dessert will go great!
