How to cook cottage cheese casserole in a frying pan. How to cook cottage cheese casserole in a frying pan: healthy recipes, even without semolina and eggs. Strict rules for a cottage cheese casserole recipe

Hello, dear hostesses. In our family, cottage cheese casseroles are eaten very quickly. Even my son is ready to eat them every day instead of breakfast, lunch and dinner :) When you are too lazy to preheat the oven, but your soul requires baking, you can cook it in another way. I will share with you recipes on how to cook cottage cheese casserole in a frying pan. Believe me, it turns out just as tender and fragrant.

This is a classic version of Austrian pastries with cottage cheese. It is prepared as a dessert and served in local cafes. And during the cooking process add a little rum. Due to vanillin, the casserole turns out very aromatic.

  • 250 g cottage cheese;
  • 125 ml sour cream;
  • zest of ½ lemon;
  • 3 chicken eggs;
  • 3 tbsp. l. wheat flour;
  • 2 tbsp. l. corn starch;
  • 1 tsp vanilla essence (or vanillin);
  • 2 tbsp. l. Sahara
  • a pinch of salt
  • 25 ml rum (optional);
  • 30 g butter

Grind the cottage cheese in a blender to a puree-like consistency. Separate the yolks from the whites. In a deep bowl, mix cottage cheese, sugar, flour, starch, vanilla sugar, sour cream and lemon zest.

When the dough has a homogeneous consistency, add a little rum. Add as desired. I’ve cooked it with or without rum, and it’s delicious either way :). Mix everything again. Leave the finished mixture on the table for 15 minutes.

Once time has passed, in a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Using a spatula, fold the egg whites into the curd mixture.

Mix gently from bottom to top so as not to lose volume.

Heat 15 grams of butter in a frying pan. Place the dough and cook over medium heat for about 5 minutes. Cover the pan with a lid.

After 5 minutes, look at the edges - they should turn golden and pull away from the edge of the pan. This means the bottom is already baked. Using a large plate, turn the casserole over to the other side. Cover with a lid and cook for another 3-4 minutes.

The finished cottage cheese casserole is best served hot, sprinkled with powdered sugar or adding jam.

Fill the raisins with warm water. Leave it for about 20 minutes - during this time it will swell. Pour sour cream and semolina into a bowl. Mix these components thoroughly until the mass becomes homogeneous. There should be no lumps in it. Set the mixture aside for a few minutes.

Pour the cottage cheese into a clean bowl and use a fork to mash it well. As a result, the component should become homogeneous.

Break the eggs into a large bowl. Pour sugar and salt into them and beat this mixture well. The result should be a homogeneous liquid consistency mass. Next, combine the cottage cheese with the egg mixture. We also send semolina swollen in sour cream here. Gently mix the ingredients with a spoon. Then we enrich the composition with slaked soda and mix everything thoroughly again.

By this time, the raisins should already swell. Drain the liquid and place it on a paper towel to remove excess water. Then we add it to the curd mixture and mix everything well again.

Generously grease the bottom and sides of the pan with butter. Place the curd mass here and distribute it evenly. Place the frying pan on low heat and cook the casserole for 20 minutes with the lid closed.

When you see a golden brown crust around the edges, remove the pan from the heat and serve the casserole to the table. Enjoy your meal :)

  • 4 tbsp. spoons of sugar;

Mash the cottage cheese thoroughly with a fork. As a result, you should get a mass that is homogeneous in consistency. Add eggs, sour cream, 3 tbsp. spoons of sugar and salt. Mix all these components using a blender or mixer. We enrich the mixture with flour and mix everything thoroughly again. Set the mixture aside for now.

Wash the fruits, remove stems, seeds and peel. Cut into slices. Place the frying pan on the fire and melt the butter in it. It should cover the bottom and sides of the pan. Place the slices in heated oil and sprinkle them with 1 tbsp. a spoonful of sugar and cinnamon. Fry the apples over medium heat until caramel brown. Don't forget to turn them over. Otherwise, you’ll make a cottage cheese casserole with coals :)

Place the curd mixture on the apples and smooth it out. Reduce heat to low and cover the pan with a lid. Cook for about 30 minutes. Then let the casserole cool slightly. Then turn it over onto a plate so that the rosy apples are on top. Before serving, sprinkle the dessert with powdered sugar.

Delicious cottage cheese casserole on the stove without eggs

Did you know that eggs can be replaced with bananas in baked goods? Yes, yes, this is true. Bananas have a delicate sticky structure, so they can replace eggs. In addition, they will also enrich the dessert with their subtle aroma. I still make pancakes this way.

Stock up on the following components:

  • 400 - 450 g cottage cheese;
  • 100 g sour cream;
  • 80 g sugar;
  • 60 g semolina;
  • 1 banana;
  • a piece of butter.

Transfer the sour cream to a small bowl and add semolina. Mix everything thoroughly until smooth. Set it aside for a few minutes to allow the semolina to swell.

Place the cottage cheese and sugar in a clean bowl and mash them thoroughly with a fork. We enrich the composition with semolina swollen in sour cream and mix everything.

Peel the banana, puree it using a blender or mash it with a regular fork. Add it to the curd mixture and mix well.

Carefully grease the bottom and walls of the pan with butter. Then put the curd mass into the bowl and distribute it evenly. Place the frying pan on low heat and cover it with a lid. Cook for approximately 30-35 minutes. Then let the casserole cool a little and serve the delicious dessert on the table!

To prepare the casserole on the stove, use a thick-bottomed, cast-iron frying pan or cauldron. In such a container the curd mass is heated better. And thanks to the fact that there are high sides, the dessert will rise well.

To make the dessert delicious, take a responsible approach to the choice of cottage cheese used. The product must be fresh (do not use sour ones). In addition, it is better to give preference to full-fat cottage cheese rather than 1% cottage cheese.

Before adding flour, be sure to sift it. This will saturate it with oxygen and make the baked goods more airy. And add half a teaspoon of soda slaked in 9% vinegar.

Cook the cottage cheese casserole over low heat and with the lid closed. This will create a simmering effect - approximately the same as what happens in the oven when baking. If you increase the heat, the edges of the dessert will brown, but the inside will remain raw.

Almost all casserole recipes say that this dish should be cooked in the oven. But, unfortunately, not everyone has it, which, however, should not stop. After all, you can easily and simply prepare a casserole in a frying pan without an oven, and the dish will be even more tasty and aromatic.

If you follow these tips, the cottage cheese treat on the stove will turn out just like in the oven. To prepare cottage cheese casserole in a frying pan without using an oven, you can use the following step-by-step recipe.

Step 1: prepare the raisins.

Pour the raisins into a deep bowl and fill with hot, clean water. Leave dried fruits for 20 minutes aside so that they swell.
After the allotted time, carefully drain the liquid and transfer the components to kitchen paper towels. We leave them aside for a while so that excess water drains from them.

Step 2: prepare semolina with sour cream.

Pour the sour cream into a small bowl and immediately pour in the semolina. Using a tablespoon, mix everything thoroughly until a homogeneous mass without lumps is formed. Now leave the mixture aside so that the semolina can swell. By the way, our casserole will turn out much tastier and airier this way.

Step 3: prepare the cottage cheese.

Pour the cottage cheese into a clean small bowl and, using a fork, grind it thoroughly so that the component becomes homogeneous and without any lumps.

Step 4: Prepare the egg-sugar mixture.

Using a knife, break the eggshells and pour the yolks and whites into a medium bowl. Pour the sugar here and, using a hand whisk, whisk everything thoroughly until the mass becomes homogeneous. Attention: As few sugar crystals as possible should float at the bottom.

Step 5: prepare the cottage cheese casserole in a frying pan.

Place the grated cottage cheese in a bowl with the egg-sugar mixture. Using a hand whisk or fork again, whisk everything thoroughly until smooth.
Next, add the semolina swollen in sour cream. Mix everything well again. Now, right above the bowl, extinguish the baking soda with a few drops of table vinegar. Immediately after this, pour the cottage cheese into the container and mix everything thoroughly again until smooth.

Grease the bottom and walls of the frying pan with vegetable oil or a small piece of butter. Then pour the curd mass here and be sure to level its surface with a tablespoon.
Now put the frying pan on low heat, cover with a lid and cook the casserole for 20 minutes. During this time, the mass should become dense and cover the edges with a golden crust. By the way, the baked goods won’t be particularly brown this way, only the sides and bottom. At the end, turn off the burner and set the pan aside.

Step 6: serve the cottage cheese casserole in a frying pan.

When the cottage cheese casserole has cooled slightly, carefully transfer it to a special plate. To do this, simply cover the baked goods with a dish and quickly turn the structure upside down with a quick movement of your hands. Using a knife, cut the baked goods into portions and serve to the dessert table, topping with sour cream if desired. A dressing such as condensed milk, any jam or preserves will also work. But you can treat your friends and family to a delicious and aromatic casserole along with tea, coffee and other hot drinks.

To prepare a delicious casserole, try to use either homemade cottage cheese or cheese with a high fat content, for example, 15–20% ;

In addition to raisins, you can add dried apricots, prunes and other dried fruits to baked goods. In this option, they must be thoroughly rinsed under running warm water, dried with kitchen paper towels and chopped on a cutting board with a knife;

If you come across grainy cottage cheese and cannot mash it with a fork, do not be discouraged, because in this case it can be crushed using a blender at low speed. This way the cheese will turn into a tender curd mass, and the casserole will turn out airy and incredibly tasty;

These baked goods can be stored in the refrigerator in a food container for up to 2–3 days, if you have it until this time.

Add sugar, vanilla sugar and eggs to the cottage cheese, grind thoroughly so that there are no too large grains of cottage cheese.

Add semolina, sour cream, salt and soda to the resulting curd mass.

Mix well, add washed and dried raisins.

Add one tablespoon of flour and mix the curd mass again. Line a frying pan with parchment, grease with butter and sprinkle with semolina.

Place the frying pan over the lowest heat and cover tightly with a lid. Cook the cottage cheese casserole for 20-25 minutes without opening the lid. Then remove the pan from the heat. Allow the casserole to cool until warm in the pan without a lid.

Now the casserole can be easily removed from the pan and the parchment removed. Before serving, you can sprinkle it with a little powdered sugar and decorate with berries.
